This Week’s Meal Prep

Now that I’m back at work, meal prepping has become a top priority. I’ve learned that, since I typically get off at 8pm, I need to have food already prepped and ready to go. Otherwise, I will eat my whole pantry until I figure out what I want. Plus, who wants to cook at 8:30pm? I sure don’t.

Since I have my long shifts on Friday and Saturday, I made Thursday a meal-prep day. I ended up making two meals, a lunch and dinner.

First up: Sausage & Bell Peppers with Air-Fryer Potatoes

This recipe was super easy. The recipe recommended Chicken & Apple Sausage, but the Caprese Chicken Sausage was cheaper. All you have to do is sauté the bell peppers and onion, add the garlic, and then add the sausage. That’s literally it. So easy.

As for the potatoes, I just chopped them up; seasoned them with garlic, salt, and savory seasoning; tossed them in olive oil; and cooked them in the air fryer for 25 minutes, tossing every 5 minutes or so.

I feel like this would be good with an egg scramble. I think I’m going to try it one of these days, but it’s also good as is.

Second Meal: Easy Cuban Picadillo

Since I tried this recipe out a couple weeks ago, I pretty much had most of the ingredients. All I needed to get was rice, turkey, onion, and bell pepper. However, last time, I did not include onion, due to the whole salmonella outbreak, and I didn’t really notice a difference. It’s still delicious with or without it. I also used jasmine rice instead of brown rice this time around, and I think I prefer the jasmine rice.

Basically, all you have to do for this recipe, is sauté everything together and let it simmer after you add the tomato (or in my case pasta) sauce and apple cider vinegar. This is also another delicious recipe that’s easy and quick to make.

I was planning on baking a dessert as well, but, to be honest, I just couldn’t be bothered with it. I decided to save it for Saturday night or Sunday, when I don’t have to work.
